SUGAR COOKIE LAYER CAKE

Layers of giant sugar cookies and vanilla buttercream frosting make a fun dessert!

INSTRUCTIONS

TO MAKE THE SUGAR COOKIE LAYERS:
  1. Preheat oven to 375 degrees. Grease 3 8-inch cake pans and line the bottoms with parchment paper (If you don't have 3 cake pans, you can bake the layers in
  2. In a medium bowl, combine the flour, salt and baking soda and set aside. In the bowl of an electric mixer fitted with a paddle attachment, beat together the butter and sugar until light and fluffy, about 3 minutes on medium high. Add the eggs one at a time, mixing after each. Add the vanilla. Add the flour mixture in 2 additions, mixing until just combined.
  3. Divide the dough in thirds and press into the prepared pans, using a greased spatula or parchment paper to spread it evenly. Bake for 10-15 minutes until lightly golden and a toothpick inserted into the middle comes out clean. Cool 10 minutes in the pan, then transfer to a wire rack to cool completely.
