Sausage & Cream Cheese Grits Casserole

Sausage & Cream Cheese Grits Casserole - seriously delicious!! Can make ahead of time and freezer for a quick meal later! Sausage, cream cheese, grits, chicken broth, Velveeta, cheddar cheese, eggs, butter and milk. Took this to a potluck and it was gone in a flash. Everyone asked for the recipe! Great for breakfast, brunch, lunch or dinner. #casserole #freezermeal #sausage #breakfast


  1. Preheat oven to 350° F. Lightly spray a 9x13-inch pan with cooking spray. Set aside.
  2. In a large skillet, cook pork sausage over medium heat until no longer pink. Drain fat. Stir in cream cheese and break into crumbles. Set aside.
  3. In a large saucepan, add chicken stock; bring to a boil. Slowly stir in grits. Reduce heat to medium-low; cook, covered, 5 to 7 minutes or until thickened, stirring occasionally. Remove from heat.
  4. Add Velveeta cheese and butter; stir until melted. Stir in milk. Slowly stir in eggs until blended. Stir in 3/4 of sausage mixture.
  5. Transfer grits to prepared dish. Sprinkle with shredded cheese and remaining sausage crumbles.
