Lemon Crinkle Cookies with Lemon Frosting


For the cookies
 1/2 cup butter, softened
 1 cup granulated sugar
 1/2 teaspoon vanilla extract
 1 whole egg
 1 teaspoon lemon zest (more! more!)
 1 Tablespoon fresh lemon juice
 1/4 teaspoon salt
 1/4 teaspoon baking powder
 1/8 teaspoon baking soda
 1 and 1/2 cups all-purpose flour
 1/2 cup powdered sugar, for rolling
For the frosting
 1/2 cup (1 stick) butter, softened
 3-4 cups powdered sugar
 1/4 cup fresh lemon juice
 zest from one large lemon


1.Preheat oven to 350 degrees.
2.Grease light colored* baking sheets with non-stick cooking spray and set aside. (Or just use parchment paper or silpats.)
3.In a large bowl, cream butter and sugar together until light and fluffy.
